Dr. Lew, Those "boneless" ribs are probably what they call "country style" ribs, which are actually cut from the pork shoulder. So they aren't really "ribs"

I use beef ribs for some dishes (as in braised short ribs) and you can get these on the bone, boneless, or boneless with the bones on the side (to add for flavoring the dish)
